Turkey Meatloaf


As part of the aforementioned 'Resolutions' I'm determined to lose the last 8 lbs of my baby weight, since the Samster hasn't exactly been cooperative with giving me time to exercise I've gotten stricter about what I cook for dinner. Tonight's meal was super healthy and so surprisingly tasty that I thought I'd share...

Turkey Meatloaf (I served it with steamed broccoli)

Mix the following ingredients in a bowl and then smoosh into loaf pan, sprinkle with parm chz and bake at 350 degrees for 40-55 min. That's it!

12 oz ground turkey (I used breast meat)
2 egg whites
1/2 cup tomato sauce
1/2 cup oatmeal (not instant)
1/2 cup shredded zuchini (suprisingly easy to do with a cheese grater)
sprinkle of red pepper flakes (easy, they're potent!)
chopped herbs (I used fresh parsley and a smidge of dried oregano)
season w/salt, pepper, garlic powder

And now for Samantha's dinner...



She's such a lady.
