Grocery List


Every Monday I make out my grocery list for 5 dinners to have throughout the week and do my shopping. My girlfriends know this and are always asking me for ideas on what to cook this week, so I thought why not post my menu every Monday that way any busy moms out there will know a good place to look for ideas. Most of my recipes (99% in fact) are from Everyday Food, they're SO easy and really yummy. Nothing takes more than 30 minutes, I swear!

Here's the menu:

Monday- Italian Wedding Soup and Chicken Caesar Salad (minus the anchovies, ick)
*I make the full recipes even though we're only a party of 2 that way I have leftovers to eat for lunch during the week, also it's great to grill a big batch of chicken breasts at the beginning of the week for salads, quesadillas, omelets or sandwiches. I'll also thinly slice some sourdough bread, give it a spray of pam and sprinkle of parm cheese and let toast in the oven while I cook, I love having little cheesy crustinis to dip in my soup!

Tuesday - Skirt Steak w/Crispy Garlic Potatoes

Wednesday - Lemon & Olive Chicken (I think I'm going to add some canned artichoke hearts, asparagus & maybe sun-dried tomatoes) with Herbed Orzo
Orzo recipe- cook according to directions (careful not to overcook) then strain, return to pot and drizzle with extra virgin olive oil, add chopped parsley, s & p, squeeze of lemon juice and crumbled feta cheese (amounts are all to taste, whatever you like)

Thursday - Pork Tenderloin with Sauteed Apples & Leeks

Friday & Saturday - out with P's parents who will be in town visiting

Sunday - Chinese Hot Pot - Now this ones a bit more complicated, P's stepdad is Chinese and taught us how to make their version of fondue, it's really yummy & very healthy but a bit complicated. Maybe if anyone's interested I'll take pics when we make it on Sunday and do a tutorial.

Extra meals- spinach & mushroom quesadillas
*Sautee a couple of cloves of chopped garlic with olive oil than add a package of sliced white mushrooms. Cook until soft and golden (4-6 min), season with s & p, remove from pan and set aside. Add a drizzle more of olive oil and sautee fresh spinach until wilted (1-2 min) - season with s & p, remove & set aside. Now wipe out skillet, turn down to med & give it a spray of Pam, lay a flour tortilla flat and add shredded mont jack cheese, some mushrooms and spinach to half. Fold over and let melt, flip, and move on to next quesadilla. Serve with sour cream & salsa. (I add fresh chopped cilantro and lime to my sour cream to give it an extra kick)

That's it! Hope it helps a few of you...now I'm off to wake Sam, she has her 6 mth doctor's appt in ohhh, 3 minutes! EEK!

  2. I think i'ma try this skirt steak recipe, looks delish. I'm so impressed that Peter's cool with all these "exotic" ingredients like mushrooms and artichokes!! Veggies are a sore subject in my house

  3. Well, it's one of those things where I just put them into the recipe and hope he takes a bite before actually looking to see what's on the plate. Last night he actually tried parsnips b/c they were mixed in with carrots and green beans. He NEVER would've taken a bite if he had known but now he likes them! (;
