What a great Valentine's weekend! I have lots of pics and will post them a little later but for now here's the menu de samster mommy...
Monday- Tuna Noodle Casserole
This is my mom's recipe and it's one of those that you kind of wing it as you make it so my measurements here are more like guesstimates, feel free to improvise to your taste
*2 cans tuna- drained (in spring water, not oil)
*1/4 cup shredded cheddar
*cream of mushroom soup (I used the healthy request kind)
*a bit of milk, maybe 2 tbs?
*around 2 cups of cooked egg noodles ('no yolks' are fine too)
*1 small can of corn (drained)
*s & p
*durkee onions for topping (you could also substitute bread crumbs)
Mix all ingredients (except topping, sprinkle that on top, hence "topping") in a casserole dish and bake at 400 degrees for around 20 min. Enjoy!
Tuesday- Soy Salmon with Sesame Green Beans Last time I made this recipe I wasn't a big fan of the bone-in steaks so this time I think I'll use Atlantic Salmon filets
Wednesday- Sage Chicken with Mushrooms (aka lighter Chicken Marsala) Sooo yummy! One of my favs and super easy. I keep a bottle of Marsala wine in the fridge just for this
Thursday- Mama's Chili (enough for a couple of nights)
After much trial and error here's my recipe for homemade, tummy warming chili
*1.5 lbs ground turkey (preferably dark meat for more flavor)
*2 and 1/2 cans tomato sauce
*2 cloves minced garlic
*4 strips thick bacon
*2 tbs worstershire sauce
*1 can undrained kidney beans
*1 packet chili seasoning
*s&p
*chopped onion, avocado cubes, sour cream, shredded cheddar & saltines for toppings
With olive oil in the bottom of your pot cook garlic for a minute or two and then add turkey. Brown turkey (3 min) Add remaining ingredients and let simmer for an hour stiring every so often. Top and eat up!
