Grocery List 6-1-09
A bunch of these are from my everyday food magazines that are piling up on my desk, I haven't tried them yet but boy do they look yummy! I was also very bad over the birthday week so we're back on the low-fat, low-carb, extra veggie and lean meat diet. Well, with the exception of Taco Tuesday of course. Of course.
Monday- Roasted Salmon with Herbed Yogurt
I don't like dill so I think I'll use basil instead, also I'm just going to use 16 oz of salmon filet so it's enough for me, P and a bit for Samster. Remember, babies should get at least 3 oz of omega rich fish a week! Healthy brains ladies, healthy brains. Ew, that sounded weird to say in a recipe post.
Taco Tuesday- Pork Carnitas
Wednesday- Gnocci with Summer Vegetables This is from ready, set, craft! and looks super yummy but I think I'll change it around a bit by adding eggplant to the veggies and making my own gnocci with sweet potatoes for added nurtients. When I made the most amazing recipe ever, aka pumpkin gnocci with sage mushroom sauce, over Thanksgiving I was surprised by easy it was to make gnooci and ohhhh so good, so I've been wanting to give sweet potato gnocci a whirl, I'll let you know how it goes!
UPDATE*** This was AMAZING! Seriously, one of my favs and I will SO be making it again! The sweet potato gnocci were the best, don't be intimidated by making your own, this was VERY VERY EASY, I promise! And the payoff, well, let's just say I'm counting down the hours until I can eat the leftovers. (Also, I microwaved my sweet potatoes for 10 min, or until mushy, instead of roasting)
Thursday- Honey Teriyaki Chicken with Asian Slaw
Not a big fan of chicken thighs so I'll substitute breasts instead...
Friday- My in laws are in town and Peter's stepmom is allergic to gluten so here's the yummy gluten free meal we'll be making: Pork, Apple & Onion Kabobs, (we test drove this recipe last night and it was AMAZING!) Mango/Avocado and watercress salad (raw watercress is a bit too bitter for P though so I'll substitute baby greens) & if I have time allergen free brownies

I got my Everyday Food magazine in the mail like the day after you posted and I made the Summer Gnocchi last week and was very surprised by how good it and simple it was! My husband who hates any type vegetables actually ate it as well!
