Grocery List 3-3-2009

I was going to put off shopping until tomorrow but then I realized that it's actually Tuesday, not Monday...sheesh. Here it goes!

Tuesday- Tilapia Filets with Spinach, Capers & Tomatoes (Everyday Food Magazine)

*Super light, healthy and ridiculously easy...literally ready in 10 minutes. Also Tilapia is a really mild fish if you're a little seafood hesitant

1cu cherry tomatoes, halved
1/4 tsp red pepper flakes (less for mild)
2 tilapia fillets
s & p
2 lg handfuls of fresh baby spinach
1 tbs butter
1 tbs lemon jc
1 tbs capers, drained

*In a med skillet drizzle olive oil and bring 1/4 water to boil, add toms and red pepper flakes, top toms with tilapia fillets and season with s & p. Cover, cook 3 mins. Add spinach on top and cover again. Cook until spinach is wilted and tilapia flakes easily with fork. About 2 min. With a slotted spoon or spatula remove fillets and veggies. Cover with foil.

*Make sauce in the skillet you just cooked in. Off heat, add butter, lemon jc & capers. Swirl until butter melts, season with s & p. Drizzle with sauce and eat up!

Wednesday- Butternut squash soup (will eat off of this all week) and my stuffed turkey burgers with sweet potato fries

*Get frozen sweet potatoe fries in oven. Mix a package of ground turkey with a couple tbs worstershire sauce, 1 garlic clove minced (or garlic powder if you dont have fresh), season with s & p. Once mixed make a ball out of meat and press center to form a little bowl, stuff with a handful of shredded cheese. (I smush the cheese into a little ball in my hand so it stays together easier) Form meat around cheese and shape into patty. Cook on stovetop in large skillet with a little olive oil for around 4 min each side. Season sweet potatoe fries a sprinkle of s, p, chili powder, brown sugar & cinnamon. Yum!

Thursday- Lemon Parsley Pork Chops & Brocoli

Friday & Saturday- Friday I have a baby shower to go to and Saturday I'll think we'll take the Samster out to dinner...

Lunch idea- Thin crust pizzas
